This high mountain Dong Ding Oolong is hand-picked, hand-rolled, and lightly roasted, making for the kind of balanced expression between florality and sweetness that has made the Nantou region famous. Dong Ding translates to “frozen peak,” as only the highest elevations in these tall mountains are capable of producing this intoxicating flavor due to the amino acid buildup that happens at low temperatures. Floral aromas give way to notes of caramel and cream, a flavor profile that only grows stronger as the leaves unfurl and resteeped multiple times.
